These banana protein cookies are soft, gooey and loaded with chocolate chips.
The ripe banana gives them their natural sweetness, while the almond butter and vanilla protein powder create a rich, satisfying cookie with 17 grams of protein.
They’re incredibly simple to prepare and perfect when you want something that feels indulgent without throwing your macros out the window.
Ingredients
- 250g very ripe banana
- 115g Holy Nuts blanched almond butter
- 130g Rule 1 Vanilla Whey Isolate
- 40g Noshu Sugar Free Dark Choc Chips
- ½ teaspoon baking powder (optional)
- Small pinch of salt

Method
- Preheat your oven to 175°C fan-forced and line a baking tray with baking paper.
- Add the banana to a mixing bowl and mash until mostly smooth.
- Add the almond butter and mix until fully combined.
- Stir through the protein powder, baking powder and salt until a thick cookie dough forms.
- Allow the mixture to rest for 5–10 minutes so the protein powder can absorb some of the moisture.
- Fold through the chocolate chips.
- Divide the mixture into eight portions on the prepared tray. Shape and gently flatten each portion, as the cookies will not spread much while baking.
- Bake for 10–12 minutes. The centres should still look slightly soft when removed from the oven.
- Leave the cookies on the tray for at least 15 minutes to cool and set.
Avoid overbaking them. They will continue to firm as they cool, while the centres remain soft and gooey.
