Creamy Berry Overnight Oats

These overnight oats are thick, creamy and packed with 50 grams of protein.

The frozen berries slowly thaw overnight, releasing their juices into the oats, while the Greek yoghurt and vanilla protein powder create an almost cheesecake-like texture.

Prepare it before bed, leave it in the fridge and breakfast is ready when you wake up.

Ingredients

  • 40g rolled oats
  • 150g high-protein Greek yoghurt
  • 30g vanilla protein powder
  • 100ml unsweetened almond milk
  • 100g frozen mixed berries
  • 10g blanched almond butter
  • 5g maple syrup
  • ¼ teaspoon cinnamon
  • Small pinch of salt

Method

  1. Add the Greek yoghurt, protein powder, almond milk and maple syrup to a jar or container. Mix until smooth.
  2. Stir through the rolled oats, cinnamon and salt.
  3. Fold the frozen berries directly through the mixture.
  4. Cover and refrigerate for at least six hours, preferably overnight.
  5. Stir well in the morning and top with the almond butter.

For a slightly softer consistency, add a small splash of almond milk before eating.
